Jallab Ice Cream

For 500 ml of ice cream
Ingredients:
- 70 ml grape and date syrup (jallab)
 - 300 ml whole milk
 - 50 ml fresh cream
 - 3 egg yolks
 - 1 vanilla pod
 - 50 g raisins
 - 1 tsp cookie crumbs
 
Utensils:
- Ice-cream maker
 
Preparation:
- Split the vanilla pod. Remove the seeds with the tip of a knife.
 - Bring the milk, cream, vanilla seeds and vanilla pod to a boil in a saucepan. Remove from heat and allow to infuse.
 - Whisk the egg yolks in a bowl.
 - Remove the vanilla pod and pour the milk-cream mixture into the bowl of egg yolks. Whisk well.
 - Add the grape and date syrup and cook in a water bath for 5 mins, stirring constantly.
 - Chill the cream in the fridge and let it rest for 24 h.
 - Pour the mixture into an ice-cream maker and churn, adding the raisins gradually.
 - Just before serving, sprinkle the ice cream scoops with cookie crumbs.
