Fattoush Salad with Pomegranate Molasses and Sumac

Difficulty: Easy

Preparation time: 25 mins

For 4 people

 

 

Ingredients:

 

  • 1 heart of romaine lettuce 
  • 1 cucumber
  • 3 tomatoes  
  • 1 small onion, sliced  
  • 2 radishes, very thinly sliced  
  • ½ bunch flat parsley, chopped 
  • ½ bunch fresh mint, chopped 
  • 2 pita breads, cut into small squares  
  • A few pomegranate seeds for garnish  

 

For the dressing:

 

 

Preparation:

 

  1. Cut the pita bread into small pieces, brush with a little olive oil, and bake for 5 mins, turning halfway through. Set aside on paper towels.  
  2. Rinse the tomatoes and cucumber and cut into cubes. Chop the herbs. Rinse the radishes and slice thin. Cut the lettuce. Put all the vegetables in a large bowl. Add the pita pieces. 
  3. Mix all the dressing ingredients. Pour over the salad.  
  4. Toss gently and top with pomegranate seeds.
