
Fattoush Salad with Pomegranate Molasses and Sumac

For 4 people
Ingredients:
- 1 heart of romaine lettuce
- 1 cucumber
- 3 tomatoes
- 1 small onion, sliced
- 2 radishes, very thinly sliced
- ½ bunch flat parsley, chopped
- ½ bunch fresh mint, chopped
- 2 pita breads, cut into small squares
- A few pomegranate seeds for garnish
For the dressing:
- 1 tsp sumac
- 2 tbsp pomegranate molasses (to taste)
- 4 tbsp olive oil
- Salt and pepper
Preparation:
- Cut the pita bread into small pieces, brush with a little olive oil, and bake for 5 mins, turning halfway through. Set aside on paper towels.
- Rinse the tomatoes and cucumber and cut into cubes. Chop the herbs. Rinse the radishes and slice thin. Cut the lettuce. Put all the vegetables in a large bowl. Add the pita pieces.
- Mix all the dressing ingredients. Pour over the salad.
- Toss gently and top with pomegranate seeds.
