Christmas Turkey with Zaatar & Fruits in Syrup

For 6 persons
Ingredients:
- 1 free-range turkey
 - 10 dates stuffed with almonds in syrup
 - 1 jar bitter orange peels in syrup
 - 1 shallot
 - 4 teaspoons zaatar premium qawzah
 - 2 cloves garlic
 - 30 cl chicken stock
 - 20 cl white wine
 - 150 g minced pork
 - 100 g ground veal
 - 1 pinch salt and pepper
 
Preparation:
- Preheat the oven to 180°C.
 - Chop the shallots and mince the garlic.
 - In a salad bowl, mix the minced pork and ground veal.
 - Add the shallot, garlic,1 teaspoon zaatar premium qawzah and mix.
 - Cut 5 dates stuffed with almonds in syrup then incorporate them into the stuffing.
 - Season with salt and pepper.
 - Stuff the inside of the bird with the preparation.
 - Arrange the turkey in a baking dish, add the bitter orange peels in syrup and the remaining dates.
 - Pour the chicken stock and white wine over the turkey.
 - Bake for 1h30 at 180°C. Halfway through cooking, baste the turkey to prevent it from drying it out. Serve hot.
