Chocolate Easter Nest with Bitter Orange Syrup

Ingredients:
For the cakes:
- 60g dark chocolate
 - 60g butter
 - 2 eggs
 - 50g sugar
 - 20g flour
 - 2 tbsp bitter orange syrup
 - 1 pinch of salt
 - ¼ sachet baking powder
 
For the topping:
- 200g mascarpone
 - 100g icing sugar
 - 25g dark chocolate
 - 8 small chocolate Easter eggs
 
Utensils:
- Piping bags
 - Cupcake nozzle
 - 15 cm cake mold
 
Preparation:
For the cakes:
- Preheat the oven to 180°C.
 - Melt the chocolate and butter in a bain-marie.
 - Separate the egg whites from the yolks.
 - In a bowl, whisk the egg yolks and sugar.
 - Add the flour and melted chocolate. Mix.
 - Add the bitter orange syrup. Mix.
 - Beat the egg whites until stiff and fold them into the mixture. Mix gently.
 - Butter the cake tin.
 - Pour in the mixture and bake for 25 mins at 180°.
 
For the topping and finishing the cake:
- Melt the chocolate in a bain-marie.
 - Gently mix the mascarpone with the icing sugar.
 - Add two teaspoons of melted chocolate to the mixture.
 - Stir gently.
 - Pour the topping mixture into a piping bag with a cupcake tip and decorate the top of the cake.
 - Place the chocolate eggs.
