Rolled Apple & Jallab Brioche

For 1 brioche
Ingredients:
- 225 g flour
- 3 g dry baker's yeast
- 30 g sugar
- 1 egg
- 110 ml milk + 1 tbsp milk
- 40 g butter + 25 g butter
- 2 apples
- 4 tbsps grape & date syrup (Jallab)
- 1 pinch salt
Utensils:
- Cake tin
- Brush
- Food processor
Preparation:
- Place flour, baking powder, salt and sugar in the bowl of a food processor. Mix well.
- Add egg, 110 ml milk and knead.
- Add 40 g of diced butter and knead for 10 minutes, until the dough comes together.
- Form into a ball and leave to rise in the bowl, covered with a tea towel, for 1 hour at room temperature.
- Dice the apples into small pieces.
- In a bowl, combine the jallab, apples and 20 g of melted butter. Set aside.
- Knead the dough and roll out into a rectangle on a floured work surface.
- Brush the dough with the apple-jallab mixture.
- Roll the dough into a long sausage. Cut into sections.
- Arrange the pieces in a buttered cake tin.
- Cover with a towel and leave to rest for 1 hour
- Preheat oven to 180°C.
- Brush the rolled brioche with a little milk.
- Bake for 50 mins
