Makdous, is made with cured baby eggplants stuffed with chopped walnuts, garlic, and other aromatics, and cured in olive oil. The addition of chili to this makdous adds a kick and greatly enhances the tangy taste of this delicious treat.
Traditionally, Makdous was prepared in late autumn to be enjoyed throughout the winter months. This delicious appetizer pairs well with almost any type of cheese, and is typically eaten with some bread and tomatoes on the side, or chopped and tossed into salads. The popular delicacy is found in every Lebanese pantry and it can be served with any meal of the day. Our baby eggplants are grown in the Qaa region, in the far east of Lebanon. These lands are flooded with summer sun and they are the perfect climate for this crop. Qaa is renowned for producing the best makdous in the country.
